Beef is so inexpensive I can get a pound for a dollar but I’m not a good cook nor do I know any good recipes. Anyone have any suggestions?

1 lb of lean ground beef
1 c of cooked rice (cooled off) dash of sea salt pepper to taste finely chopped onions (if you don't like them leave them out) 2 cloves of fresh garlic crushed or minced 1 or 2 tsp chili powder (or to taste) 12 oz of low sodium tomato juice mix everything but the tomato juice together, make meat balls, brown in grill, transfer to cassarole dish or any oven friendly vassel, pour in tomatoe juice, cook in oven @ 350 til cooked through. Add some vegies or a salad and you have a fairly complete meal. I can eat 1/2 lb of meatbals no problem. So I have large salads and vegie servings with the meatballs. |
