Well I've been hearing this ALOT, from TV, mom, etc....
They say olive oil can be very unhealthy if heated, what do you guys think?? |

If you do, use only under low heat. The best oils to cook with are the ones with the least amount of polyunsaturates. So next to butter and margarin, coconut is good. Olive oil is not that bad however, like I said just use low heat. The worst ones are safflower, sesame, flax etc... you shouldn't even heat these. Canola isn't good as well but I think it also depends on how refined it is.

Why is olive oil bad for cooking? How does heating it chamge it? I have honestly never heard this...

This is why you should always store your flax oil in the fridge in an opaque container. Furthermore, the damage forms harmful free radicals that are carcinogenic. So the damage to the oil can do damage to you. Monounsaturated fats are more stable than polyunsaturates but still the best oil to cook with are saturated fats which are most stable under heat.

This just made me think of Italy. They always use Olive Oil and EVOO, but **** there food is amazing.
