These are baked so they are good for you, and very tasty.
Ingredients: 2 Sweet Potatoes 1 Tbsp Extra Virgin Olive Oil Favorite Spices Preheat your oven to 450 degrees. Wash and cut the sweet potatoes to a preferred size for french fries. In a mixing bowl, add the sweet potatoes and your spices. Pour the olive oil on top and mix to coat as evenly as you can. Wrap a cookie sheet in aluminum foil and spray it with a non-stick spray, such as Pam. Spread the potatoes across the sheet and place in the oven. The baking time will vary depending on the thichness of the slices. You should start checking them in about 20 minutes. They are done when the outside is slightly crisp and the inside is soft. I make these for my 4 year old daughter who can't get enough of them. It is so much better than the fast food options that most people eat. Enjoy!

I do this too. They're awesome! Except they make me want to use ketchup...
The first time I made them I cooked them on 350 degrees but for like 50 minutes, and they came out the best but you have to be very patient and flip them over and everything.

For deep frying it is best to choose oils with a higher smoking point. There are different types of Canola oil. The unrefined one has a low smoking point but the refined one is higher and better for deep frying. Obviously you don't want to do this very often and if you are going to deep fry consider it a cheat. So you can use Canola oil to deep fry them. Peanut oil and Safflower oil I think also have high smoking points.

Why would you consider this a cheat though if all your macros and stuff fit in to your daily caloric needs?The oils(the refined ones) are good and so are the carbs... [img]/forum/images/graemlins/smile.gif[/img]

Problem is when you deep fry a lot of the oil will get soaked up into the potato and will be hard to tell how much fat you are actually eating. Only a tablespoon of Canola oil is around 14 grams of fat. Even if you blot the potatos on a paper towel to remove as much surface oil as you can surely you will be consuming a large proportion absorbed within the potato which can throw off your entire macros for the day. If you are working on 75 grams of fat per day for example, that is only 5 tablespoons.
Also, the importance of using an oil and heating it below it's smoking point is to prevent oxidation which can release free radicals that are harmful to your health. Not only is it harmful to ingest it can also be an air pollutant and harmful to breathe.

One way( i guess) to see how much oil your taking in is to weigh your fryer with oil(on a digital scale)..then fry your potatoes with the lid down and then let them drain after back into the fryer,remove, and then reweigh your fryer again.This should give you a general idea of how much oil was consumed.If you want to get realy precise weigh your scott towels, drain again,and then reweigh them once again. The best way to get the most oil out of them is to cook them well done, the longe you fry them the more oil is pushed out, if they float well they are good. As for frying, vegetable shortening is the best. |
