I put mine in the microwave, sorry. (Pierce all over with a fork and nuke for about 6-8 mins on high for a hand sized one.)

i tried one in the microwave last time but it came out pretty bad, too mushy. i had one in a restuarant the other day that was baked and it was gooooooood
i will just give it a shot at 400 for 20 or so minutes, just use the squeeze test to see when it is done

20 mins won't be enough.
bake it at 350 for an hour. still pierce it with a fork and turn it over after a half hour. You can bake a whole bunch at once then refrigerate them. |

The FINAL Answer Is: Place aluminum foil on baking sheet. Place washed but unpeeled sweet potato on said baking sheet and bake 450 degrees for approx 1 hour. Squeeze with a hot mit to see if it is soft. Skin should be slightly "charred" and bubbled up off of the sweet potato's soft insides. I bake about 5 or 6 up at a time, let them cool and place them in the frige in a ziplock bag. I reheat them in the microwave for lunch. Peel first, mash on my plate and reheat for about a min to a min and a half. Top w/ 1/2 c 1% cottage cheese. Great lunch w/ a mixed green salad on the side! If i'm having some other protein, I'll just sprinkle Garam Masala spice on it. It is GREAT! I have also peeled and chopped the sweet potatoes up into chunks, spread in a pam sprayed casserole dish, sprayed the tops w/ Pam, sprinkled generously w/ Garam Masala, stirred and then roasted in 450 degree oven for about 45 min to 1 hour.
