Rick I am not 100% sure I understand your question. Low carbohydrates won't be a food source, but rather about portion size. Anything can be low carbs ranging from a huge steak to a very tiny slice of bread.

Important tips;
Eat healthy carbs and avoid refined flours and sugars.
Consume adequate fiber.
Time a large percentage of your daily carbs before and after your workout when your body will use it most effectively.
Always consume carbs with a protein source.
