LIME & GINGER CHICKEN

Prep Time: 10 min(chill time extra) Cook Time: 8 min
1/3 cup fresh lime juice
2 tsp. grated fresh gingerroot or dash ground ginger
3 cloves garlic, flattened
1/2 tsp. dried red pepper flakes
4 boneless, skinless chicken breast halves
2 tsp. olive oil
1/2 cup salsa
1. For marinade combine lime juice, ginger, garlic and pepper flakes in a resealable plasic bag. Add Chicken and chill for 2 hours or overnight, turn bag occasionally
2. Drain chicken; discard marinade. In a large nonstick skillet cool chicken with olive oil over medium heat for 8 to 10 minutes. Turn and cook untill chicken is done. Serve with Salsa and lime wedges.
