Black Bean Omlet
2 whole eggs
2 egg whites
fresh spinach
1/3 cup black beans (can mash up if you like)
small piece of broccoli
pepper, garlic, cilantro
Beat eggs. Cook in large frying pan and cover to cook both sides. Add other ingredients to one side, fold in half and let veg/beans get warm. Enjoy! If you like salsa put some on top .
