the below chicken is a bit more expensive but it's fresh so should I get that instead? does it have a higher protein count?

I go for frozen cuz it's cheaper, but I made the mistake of buying store brand. I can get a 10lb bag of frozen chicken breasts for like $25 (us) at the bulk food store and it's purdue. The sale at the local grocery store left me with sub-par chicken...

for your case, I'd get the fresh stuff and freeze it. The other stuff is full of preservatives (altho the one is just salt) and it has the "fillets removed" which is some valuable protein! But, ok for a change of pace if necessary...
