What do you guys usually do when you sleep in and don't have enough time in the day to finish all of your scheduled meals if you separate them 2 hours apart? Eat bigger meals? I've only had 3 meals so far and will probably only get in another 2 or so, which will be ~1000 calories lower than what I usually eat in a day. What do you guys suggest? (I'm bulking).

If you cannot fit a number of meals into a certain day, add more calories to the meals that you will have.

Remember its the average of the week. Each day should be different. So for the rest of the week just raise your calories up a little bit.

^-- Agreed. If you are awake for fewer hours you are burning less calories. No sense chowing down a bunch of cals you don't need that day. Just make sure you get the minimum of 1-1.5g protein/lb of LBM, and balance your cals out for the rest of the week.
