Since I'm bulking, should I be drinking my PWO shake on off days just for the added calories and what not? Or should I just eat a lot more to make up for it..?

PWO means Post-Workout. No workout, no shake.

Have some oats + whey to replace (or another complex carbs / protein source you want)

Ditto Malsl. Having the PWO shake when you haven't worked out would actually be counter-productive. On your off days thats a good time to increase insulin sensitivity.

yeah no point to replenish your muscle glycogen stores during your off days because... they aren't depleted /forum/images/graemlins/tongue.gif
