What would be better to have before sleep?
Chicken or an oats/whey shake?
Also, what is the best food to have right before bed?

At night, your insulin sensitvity is decreased. Thus, save after a cardio session at night, or after a post workout shake, it would be beneficial to go low carb.
At night, I usually have some meat, or cottage cheese, a salad, and some efa's. Read Z-factor in the anatomy section for much more.

1 cup of cottage cheese and 2 tbsp of flax, can't go wrong

Hm, so would it actually be beneficial for me to have more carbs (particularly some starchier carbs) after my PWO shake even though that PWO meal is usually around 7 PM? This usually isn't an issue on a bulk but on this cut I've been restricting my carb intake greatly after my PWO shake (plenty of GLV and EFAs at night).

Definitely have some carbs after your pw shake to maintain your blood sugar, among other reasons.

Some natty pb or a cup of cottage cheese usually holds me well through the night.

I thought that oats before bed was a bad thing. If anything, eat some spinach or broccoli with your cottege cheese

i mix cottage cheese, flax, oats, and PB. prebedtime. would chromium be something good to take along with this meal since my insulin sensitivity is down at night??

ZMA is to be taken on an empty stomach before bed. So I'll eat my pre-sleep food and then an hour later take the ZMA and go to bed.

you would be better off taking zma first then about 20 -30 minutes later have cottage cheese as if you eat cottage cheese first itt will block the absorption of zma
gotta say i love that straight up turkey before bed. the tryptophan and all. great!

YES. This is exactly what I do. I would say it takes longer then an hour for your stomach to empty a meal, and ZMA is best taken on an empty stomach so it can be absorbed into the body very quickly. If your eating cottage cheese before taking the ZMA, you might as well not even take it. Cottage cheese stays in your system for several hours because of the casein protein, and calcium itself fights the absorption of the ZMA. Before I go to bed, I do this:
Take ZMA
Wait 30-45 minutes
Eat Pre-Sleep Meal
SLEEP
