View Full Version : Need help with Chicken Breasts

**** it all to hell. I am tired of dry-*** skinless-boneless chicken breasts. I need to figure out some different ideas to make them tastier and not as dry. If anyone has ideas please let me know. Usually I just bake them. I saw MtGirl's post but haven't got to try it yet. Any other ideas? What the hell is everyone doing with these things?

Try boiling the breasts... also, when you nuke 'em afterword (if you do), pour a teaspoon of water over the breast, and they won't get nearly as dried out.

I use a little lemon pepper seasoning, but most stores will have a variety of things to sprinkle on them. Also, low fat/no fat italian dressing can be used to marinate them and gives pretty good taste. I've been doing these things for awhile now and I am actually looking for different recipes for all things good for you. If you decide to Microwave them you don't even have to pour water on them. Just place a small container with water in it along with the Chicken Breast and they will come out alot more moist.

I usually bake mine but wrap them in aluminum foil with celery, onion and mushroom.

Honey Mustard is an awesome marinade as well. Just take 1/2 cup honey and 1/4 cup mustard with 3 Chicken Breasts and marinate them overnight.

Mmmmmmmmmmmmmmmm Good!

Okay, first, you REALLY should try my fabu cheesy recipe I posted earlier! I've made it about five times now! Mmmmm....

There are lots of things you can do with chicken that add no fat. My most common/favorite:

Cajun Chicken (Not for the faint of heart!)

Ingredients

-chicken
-soy
-lemon juice
-hot sauce or jalapeno juice (yup, the stuff in the jar with the jalapenos is priceless!)
-blackened cajun seasoning (not necessary if you want to get creative--can use chili powder, cayenne (careful with it!), cumin, garlic powder, onion powder, and such....)
-chili powder
-garlic powder
-onion powder


Directions:

Trim fat off chicken breasts. Heat skillet. Brown chicken breasts lightly on both sides. Then add remaining ingredients. How much? Dunno, just add them til it looks and tastes right! The liquids and spices should form a black/brown sludge on the bottom of the pan as the chicken cooks. Just cook the chicken til it's done, adding more liquid if things get dry. It's okay to slightly burn the sauce, but be careful not to let it burn too much...

I serve these chicken breasts on buns with mayo and that's truly divine. But if you want a more BB-oreinted recipe, eat the chicken with some brown rice!

This recipe can be made a darker flavor with red wine or tangier with more lemon. Whatever you like!

Boiling them is a great way to get rid of that extra little amount of fat in your chicken breast..I like making a stir fry with mine with brown rice and mushrooms cauliflower broccoli sno peas, and green peppers

thanks for all the advice. I have found some bottled marinades and sauces in the store. After I go this weekend I will let you know which ones are healthy and good!

I hate to say it, but I think boiling chicken on regular basis (not in a boiled dinner) is taking it a little too far. You can get shredded without the boiling part. We still need to keep our food interesting.

AMEN! Christ! The little bit of fat that clings to a boneless, skinless, trimmed chicken breast is truly negligible when it comes to nutrition, but makes a MASSIVE difference in taste!

Taking the joy out of food, for me, is a GREAT way to give myself an eating disorder. Just tryin' to keep it sane....

I boil my chicken all the time and find it great!

To make it a little different I usually add some onion powder or garlic powder etc to the water as it boils.

I have tried boiling in chicken stock but found this a little salty.

Don't knock it until you've tried it!!!

Sandy I got tired of chicken breast too until I found that you can buy from Foster Farms pre-marinated chicken. They have:

The quickiest, best tasting, most moist way to do up a chicken breast is with a steamer. Toss some breasts in the steamer, wait about 5-10 minutes and pow you got some **** good juicy chicken breast waitin' to be digested!! Steamer at Wal-Mart $15. It's the ***** for veggies, potatos, all types of good food!!! Check it out!

First off boiled chicken does have a nasty taste....but if you peel off all noticeable fat and then boil the chicken to get rid of any unsightly fat..after this put your chicken on the bbq to give it flavour put a simple poutry sauce or salt on it, then serve with brown rice with a little soya sauce..absolutely delicious with minimal fat content..

I try to grill my chicken whenever i can
Try this book"the Human Fuel Cookbook".
It has some great recipe's that aren't that
hard to make. The publisher is "Health for
Life".

Two things that I like to do is marinate them with either A1 or Worchestersire sause, That makes them a lot less dry. The other thing, I basically dice up a cooked chicken breast and mix it with no fat tostados, fat free parmasan, and salsa (add what ever else you like on taco salad. This is a great lowfat taco salad and this also tastes great with Turkey also.

Here's your answer to dry chicken breasts: buy a George Foreman grill! No joke, it sears the outside and leaves the inside juicy and well cooked! While the grill is heating up, take your well thawed out breasts and poke holes in them with a fork, and let them soak in Balsamic vinegar, or some sort of salad dressing (preferably not the creamy ones). You will really be surprised with your new purchase!

Yeah the George Foreman Grill rocks..my brother has one and i went to his house the other day and he was cooking pike on it it was delicious

Try letting the chicken breast sit in some italian dressing overnight. Then broil the breast untill it is cooked all the way through. I usually flip it after 6 minutes then take it out after another 6-8 minutes.

I never thought of soaking it in Itailian dressing. Sounds like it would give it some pretty nice flavor, gonna have to check it out! Thanks!

theres a pretty good pasta dish that can make the chicken interesting and here it is:

ingredients-
1. chicken breasts
2. frozen or fresh broccoli
3. garlic
4. olive oil
5. pasta

directions-
1. boil either fresh or frozen broccoli until cooked properly.
2.trim fat off chicken breasts, chop them into chunks, if desired, then add 2 tablespoons of olive oil to a hot pan.
3.add garlic to the pan, and reduce heat so it doesn't burn, cook for about 2 minutes to get the flvaors going.
4. add cut up chicken to pan and cook through. when chicken is cooked, and the broccoli and cook them together for 3 or 4 minutes.
5. have the pasta boiled already according to the package instructions, and save some of the water it boiled in. toss the chicken and broccoli mixture into the pasta, and then add that water so it stays moist. season with salt, pepper, a very little bit of cheese for flavor, and if desired, drizzle another tablespoon or so of oil.

now before u all go "3 or 4 tablespoons of oil, thats a lot!" when it serves 2-4 people, it really aint a big deal at all. if youre so worried about havin like 4 tablesppons of oil in the whole dish, dont drizzle the extra oil, 2 tablespoons to cook the garlic and chicken is even less fat for 2 people.

Try this out.
Take vineger and oil, equal amounts to cover the chicken breast. Mix that is a bowl with garlic powder or salt, next mix in some chili paste (depending on your tollerance). Mix all that together, and pour it on your chicken. Bake, but not to long. This makes for a nice change in taste, especialy the next day after they have been refrigerated. This is what i would do:
Marinate your chicken breasts in light italian dressing overnight. Then bbq it, have it with some bbq asparagus and pasta.

I am a chicken eatin fool. I use skinless boneless strips and trim out that white thing down the middle. Put them in a skillet and season with fresh garlic, lemon pepper, and lemon juice. Once the chicken turns white and it practically done, turn the heat up until the bottom of the non-stick skillet turns really, really brown. Add just enough water to cover the bottom of the skillet and release the brown into the water (making a thin like gravy). Keep the heat on high and cook almost all the water out. Turn the chicken strips over and repeat for the other side. Don't cook then until they are completely dried out.

Cut breast into pieces and spray with PAM
throw into a bag with Progreso or 4Cs Italian bread crumbs

Shake and pan fry with some salt and pepper

One of the best ways that I have done my chicken is marinade it in a mixture of canola oil,cumin,oregano, and garlic. Then cook it on a foreman grill. But make sure you take it off once it turns white in the middle, there is nothing nastier than dry chicken.
