View Full Version : Delicious Cheesy Cajun Chicken!!!

I invented a new recipe last night that was truly divine! Combined with my broiled asparagus, the meal was fabulous!

Here's the recipe:

"MountainGirl Is a ***king Genius Broiled Chicken"

ingredients:

2 boneless, skinless chicken breasts
2 tbsp blackened cajun seasoning*
1 tsp salt
1 cup sour cream (fat free is okay)
1 cup cottage cheese (chive flavored is the best)
1 egg white


directions:

Mix cottage cheese and cottage chees in a bowl. Set aside.

Trim fat off chicken and score lightly with knife in lines about 1" apart. Dip chicken in egg white (or brush egg white on with pastry brush). Rub chicken with blackened cajun seasoning and salt.

Cover a cookie sheet or broiler pan with tin foil. Make sure sides of foil are turned up to prevent spills). Place chicken, scored side down, on foil and broil at level closest to flame.

Before sliding the chicken into the broiler, click your heels and repeat three times, "Mountain Girl is a ***king genius." If you don't want to swear, that's okay, but the chicken won't taste quite as good.

Cook five minutes on each side, or until the second side is cooked and slightly browned. Gob cottage cheese on chicken breasts. (It will look like too much, but it's not!) Broil for an additional five minutes or until cottage cheese is melted and slightly browned. Serve with drippings poured on top.

*Blackened cajun seasoning can be made by combining, to taste, garlic powder, onion powder, pepper, cayenne pepper, chili powder, cumin, and anything else you think sounds good!

You can also make broiled asparagus with this meal:

BROILED ASPARAGUS

Ingredients:

asparagus
oil
salt/pepper
parmesean cheese (shredded or the stuff in the can)

Directions:

Cut woody ends off asparagus, wash.
Place on tin foil in single layer(I use a separate tin foil with corners up so it doesn't drown in the chicken cajun sauce) with tips pointing toward you. Drizzle or spray heavily with oil. Salt and pepper to taste. Broil 4 minutes, then sprinkle with parmesean and broil another 3-4 minutes until slightly tender.

I dunno, SG, he's looking kind of tired to me.... (Now we'll get you for cruelty to animals!!!)

This recipe is awesome! My husband just went out of town, so the creative juices are free to flow. (He's a fussy eater, so I try it out on my own first. Otherwise I have to deal with him in the kitchen going, "Eeeeew, cottage cheese?")

But this one was better than I expected. The spices mix with the watery part of the cottage cheese (the curds melt on top but the liquid gathers on the foil) and makes a wonderful sauce!

I think I'm making it again tonight!

(BTW, do you know any good ways to prepare brussels sprouts?)

The only truly good way to eat brussell sprouts is with ketchup on them..sounds gross but I love it. I would also try some kind of vinegrette...did I spell that right? The idea being that they are little cabbages so vinegrette would be tasty.

Sandy, hon, I read that on one of your prior posts and nearly retched at the very words! Some things just sound so gross together that I can't get past that!

Actually yes you can coko them the same way you cook your asparagus... my mom has the most delicious recipie for brussel sprouts... i actually like them when she makes them and you have to keep me from eating them all up. same thing with her asparagus. i think she might have gotten it from Arthur Schwartz, but i'll see if i can get the recipie to you anyways. also, ive got a little recipie for chicken myself.

Bizo's Parmesean Chicken (eat it or die!!!!)

2 boneless skinless chicken breasts with the fat cut off, diced into pieces (you decide how big)

1/4 cup of water

oregano
basil
dried chives (optional)
parmesean cheese
salt
pepper
garlic powder

take a non-stick stir-fry pan, and put it on a high flame with the diced chicken and the water... season to your liking with oregano (i use 1 tsp.), basil (1/2 tsp.), dried chives (dash), parmesean cheese (1 1/2 tbsp.), salt (dash, i truly detest using salt, you really dont need to either), pepper (1/2 tsp.), garlic powder (1/2 tsp.).

now mix this all together until chicken is cooked... tastes really good with the juice. if this doesnt taste good you didnt cook it right. smilies/cheeburga_ron.gif
