I got sick of plain chicken breasts so I tried this and to my surprise it actually worked. I just tried it a hour ago, btw.
skinless, boneless chicken breasts (200grams)
chunks of onions (around 3 to 4 3-inch pieces)
ground garlic (about 1 teaspoon)
some flour
1. Cut up chicken breasts into finger-length pieces, and put in blender along with some onions, garlic(too much garlic would ruin the taste so be careful. Too much onions might spoil it too).
2. Blend them together until you have a fairly homogenous mix. Transfer mix into a bowl and mix again with salt, pepper, and flour. Flour makes the patties a lot softer so make sure you put a fair amount(about one and a half tbl spoons per 200g is good). Put too little flour, and you'll get a patty that's exactly the same as regular chicken breasts(in softness, that is).
3. Shape them into meatballs or burger patties(meatballs are harder to cook. I recommend mini patties, about 3-4 inches in diameter).
3. Pre-heat frying pan and cook the patties/meatballs in medium to light heat. Once they're thoroughly browned on both sides, cook in light heat for another 2 to 3 minutes. No oil necessary.
I never really had any luck in experimenting with food, but this one was good enough. I think it's fairly low in fat, and it'd be a good idea to cook a lot at once and munch on them when you don't have time.
